Construction of an Export-Standard Industrial Banana Ripening Room (Banana Ripening Room) 2026

Cavendish Banana (South American Cavendish Banana) Bananas are one of Vietnam's key export fruits, with an annual production of millions of tons to China, South Korea, Japan, and the Middle East. To ensure bananas achieve uniform ripeness (100%), have a glossy yellow peel free of dark spots or bruises, and retain their natural sweet aroma, farms and logistics centers must invest heavily. Industrial Banana Ripening Room System Precise control of ethylene gas, temperature, and circulating gas pressure. Tan Long We are a pioneering contractor bringing high-tech, European-standard banana ripening solutions to major banana-growing regions nationwide.

1. The Principle of Ripening Bananas Using Ethylene Gas and Forced Pressure

Unlike traditional ripening methods that cause darkening of the skin and uneven ripening of the flesh, industrial ripening chambers operate on precise biochemical principles:

  • Tarpaulin Airbag System: Cold air tends to circulate around the gaps in the pallet. The automatic air bubble/tape sealing system will seal the gaps on the top and sides of the pallet, creating a pressure difference that forces airflow and ethylene gas to pass through the ventilation holes of the banana carton.
  • Controlling Ethylene (C2H4) gas concentration: Spray ethylene gas at a standard concentration of 100–150 ppm during the first 24 hours to activate the respiratory cycle (climactoric peak), converting starch into natural fructose.
  • Automated CO2 management: During ripening, bananas release a large amount of CO2. When the CO2 concentration exceeds the threshold of 1%, the ventilation valve and exhaust fan system will automatically release the gas and supply fresh air to prevent the bananas from becoming suffocated and hard.

Day 2Green with light (Stage 2)16°C – 17°C90% – 95%Release the CO2 after 24 hours and supply fresh, oxygen-rich air.
Day 3More green than yellow (Phase 3)15°C – 16°C85% – 90%Turn on the convection fan at full speed to gradually lower the temperature.
Day 4More gold than green (Stage 4)14°C – 15°C80% – 85%Reduce humidity to prevent stem rot and mold.

3. Standard Equipment Configuration for Tan Long Banana Vinegar Production Room

  • Reversible Cooling & Heating Compressor Unit (Hot/Cold): It serves both the function of cooling and lowering the respiration temperature of bananas, and the function of warming them when brought into a room to activate the ripening enzymes.
  • Specialized reversible convection cooling unit: High airflow with a reversible, high-pressure fan helps balance the temperature at both the top and bottom of the pallet.
  • Automatic Ethylene Generator (Catalytic Generator): Converting pure alcohol into pure ethylene gas is absolutely safe and eliminates the risk of fire and explosion compared to high-pressure compressed gas cylinders.
  • Programmable Logic Controller (PLC) SCADA: We keep banana vinegar recipes on hand for 4, 5, 6, or 7 days, depending on the export partner's order.
