What is glazing for?
It forms a thin ice glaze around a frozen product, preventing surface moisture loss and oxidation during storage and transport. For seafood exports, the glazing ratio is also a figure written into the contract with the importing partner.
What glazing ratio is achieved, and is it adjustable?
It reaches 10 to 15% and is adjustable to the requirements of each order. The machine holds the ratio even on both product surfaces thanks to a thin-film nozzle system, giving a smooth, glossy glaze with no cracks.
What temperature is the glazing water?
0.5 to 2°C. Water close to freezing point makes the glaze adhere quickly and evenly; warmer water would thaw the product surface. This chilled water usually comes from a water chiller in the plant.
What is the product temperature before and after glazing?
In at -18°C, out at -13°C. The product warms by about 5°C through contact with the water, so it has to pass through a re-freezing belt immediately afterwards to bring the temperature back to storage level.
What is the glazing time and the belt type?
Glazing takes 0.5 to 5 minutes depending on the required ratio. The belt is a stainless steel mesh dedicated to food use, 1,800 mm wide for both the TSG.900 and TSG.1200 configurations.
Is the machine easy to clean and maintain?
The structure is simple and it is easy to operate and clean. The nozzles and the water tank are the two parts needing cleaning most often, because they directly affect how even the ice glaze is.
