The FIFO principle for goods in and out

FIFO (first in, first out) is an essential principle in managing frozen food. The batch of ice cream that entered the store first must be the first to leave, avoiding stock going past its use-by date. When stacking, staff should place older batches at the front and new batches behind.

  • Leave at least 10 cm between the product and the store walls, so the cold air circulates evenly.
